Cantonese cuisine is truly excellent. At first, I thought it was bland and boring, but over time I came to appreciate its subtlety:


First, freshness. All ingredients are freshly slaughtered, freshly sliced, and freshly prepared, with various cooking methods aimed at maximizing the natural flavor of the ingredients.
Second, authenticity. It pays great attention to the true nature of the ingredients, so that meat has its meat flavor, and melons have their melon flavor.
Third, finesse. The dishes may look simple, but behind them is a lot of craftsmanship.
