In the high-end ingredients arena, China is also steadily making inroads with “higher quality, lower prices,” leaving the EU on high alert.


Chinese producers currently account for 45% of the global foie gras supply, with an annual output of about 10,000 tons.
Since 2022, China’s truffle export volume has surged to more than three times its previous level; meanwhile, caviar—once controlled by Iran and Russia—has also shifted to being led by China.
Today, foie gras producers are mainly concentrated in Shandong and Anhui. Local breeders fatten the livers by force-feeding ducks and geese, producing several thousand tons of foie gras each year.
One Western chef said that China-made foie gras still has room for improvement. The taste is good, but it lacks the rich, mellow sweetness that lingers and lingers in the mouth.
