Trivial fact: Many "traditional famous dishes" in China were born during the late Qing Dynasty or even in modern times.


Chili peppers were introduced to China at the end of the Ming Dynasty, but truly entered the cuisine after the mid-Qing Dynasty.
The "Eight Great Cuisines" are a modern classification, officially established only in the 1970s and 1980s.
To be more specific:
Mapo tofu was created in 1862
Peking duck (modern hanging oven version) was created in 1864
Guo Bao Rou (sweet and sour pork) was created in 1907
Chongqing hotpot was born in the 1920s-1930s
Dapanji (big plate chicken) was created in the late 1980s
There are many more such "invented traditions" in China.
