Let me start with what caught my attention first. There's this place called Ashford Castle sitting on the shores of Lough Corrib in Ireland—it's been there for over 800 years and used to be the Guinness family's private retreat. Now it's a full 5-star experience with 83 rooms spread across 350 acres. You can literally ride horses through the grounds, take boat tours on the lake, and hit their spa which won best hotel spa in Ireland in 2023. That's the kind of luxurious castle experience that actually makes you feel transported.
Then there's the French side of things. Hôtel de la Cité in Carcassonne is absolutely stunning—it's this neo-gothic castle with turrets everywhere and views that'll make you never want to leave your balcony. Spain's Parador de Oropesa is this 14th-century masterpiece between mountains and rivers. The rooms have Spanish tile floors, canopy beds, and views that make you want to stay forever. It's got this mix of old Arab fortress vibes and the New Castle built in 1402.
