I work at a bakery. Every day, I taste test the leftover scraps, totaling at least ten loaves of bread.


My coworkers all gained weight. I didn't.
It's not my physique.
Last week, a girl came in. She stood at the counter for five minutes.
Whole wheat toast. Jam. Caramel latte.
I asked: Breakfast?
She nodded.
I said, eating like that, you'll gain three jin (about 3.3 pounds) in a month.
Her hand paused in mid-air.
"Toast is fine. Jam is sugar. Latte is also sugar. Sugar plus sugar, blood sugar goes straight on a roller coaster. Hungry by ten o'clock. When hungry, eat cookies. Cookies are still sugar."
"You're not having breakfast. You're eating sugar."
She put down the jam.
"Do you know how I eat?"
"Dipping leftover bread in eggs. Dipping in unsweetened yogurt. Dipping in avocado."
"Using bread as a spoon. Sending protein and fats inside."
"Blood sugar rises slowly, gets hungry slowly. Hungry slowly, eat less."
She switched her latte to an American coffee.
I asked how she dips her eggs.
Boiled eggs chopped up, a bit of salt, spread on. More fragrant than jam.
She left.
My coworker said, why are you telling the customer so much?
I said, she'll come back tomorrow.
Yesterday, she really did come. With a bag of whole wheat toast. Standing at the cash register without leaving.
Asked me how to pick an avocado.
