Pretty restaurant food isn't my habit—homestyle country flavors are the best.
That's pretty traditional.
Half with fried sauce (completely different from Beijing's)
Half with pickled vegetables and shredded meat
Savory sauce and crispy texture with scallions and soybeans
Alkaline noodles have better chew than hand-rolled noodles, easier to keep slurping
