Chipotle Mexican Grill will open a new location in downtown Bellevue’s The Eight office tower, expanding its presence in the area. The new 1,900 square-foot restaurant is expected to open in late 2026 and will be joined by Sabine Café and Bar in the building’s retail pavilion. The Eight is a 25-story office building with 80% of its office space currently leased, including a large portion by The Pokémon Company International.
